SANSEI is the latest project from the San Barbato Resort in Lavello.

SANSEI is a unique Japanese restaurant in southern Italy. As Mauro Brasioli, the resort’s communications director, explains, the name derives from the word “San,” which means “Mr.” or “Sir” in Japanese, and also references San Barbato. Combined with the word “Sei,” it evokes the Japanese term “Sensei,” an honorific that often means “teacher” or “master.” The project stems from a deep passion for cuisine and a commitment to using only the highest quality ingredients. Antonio Liseno, the owner of the resort, notes that SANSEI is in line with the resort’s other outstanding offerings, including the Michelin-starred Don Alfonso 1890, the Terrazza Bellavista Franciacorta, and the recently opened Proxima pizzeria by Franco Pepe.

Chef Nobuya Niimori, who oversees the kitchen at SANSEI, has successfully blended his knowledge of traditional Japanese culture with Italian cuisine throughout his illustrious career. Each dish he creates showcases this fusion, reflecting a refined culinary approach that avoids excessive seasoning. The dining room is elegant, futuristic, and vibrant, with 18 large screens displaying themed artistic images.

At SANSEI, Chef Niimori has brought together his extensive expertise, the skilled handling of ingredients, and the exclusive techniques of Japanese culinary preparation. His love for his homeland, its traditions, and his curiosity about Italy’s unique products, combined with his ability to harmoniously blend different culinary cultures, are the key elements of San Barbato’s ambitious project.

We had the opportunity to preview some of SANSEI’s dishes at a special event for the press. The resort’s director, Canio Sabia, presented the project and its key figures.
